Winemaking and artisan cheesemaking share a common foundation: patience, timing, and exceptional ingredients. On Saturday, October 17, we are partnering with our friends at Cailloux Cheese Shop for an intimate cheese pairing experience just for Members.
Together with Cailloux’s cheesemongers, our Estate Director, Mauro Cirilli, will guide you through a flight of current estate release wines paired alongside a hand-selected lineup of small-batch cheeses.Â
We’ll explain how to consider pairing the bright acidity and structured tannins of our Santa Ynez Valley wines with the fats, salts, and aging styles of cheeses—while sharing the background on the creameries and vintages represented.
